Rajasthan can be quite affordable if you plan the route properly. I did Jaipur, Jodhpur and Udaipur and stayed mostly in small heritage hotels rather than the big palace properties. In Jaipur we spent a morning around the old bazaars and Hawa Mahal, then had kachori and lassi; Jodhpur was more about Mehrangarh, the blue lanes and little food places around the Clock Tower. I booked the trip with Boketto Travels, and they had us do Kumbhalgarh on the Jodhpur to Udaipur leg, which worked nicely instead of adding another separate stop. Udaipur was then mostly City Palace, Lake Pichola and wandering around the old city in the evenings. So yes, you can do Rajasthan without spending a fortune, especially if you keep the itinerary to 3 or 4 places.
